Does this work for a hip roof?

Yes. A hip roof and a gable roof over the same footprint at the same pitch have almost the same surface area, because the hip simply redistributes the same planes. What changes is the waste factor, since hips and valleys generate far more off-cuts.

What about dormers and porches?

Measure each section separately and add the results. A single rectangle cannot describe a complex roof, and assuming it can is the most common source of a short material order.

How much overhang should I allow?

Twelve to sixteen inches is typical in the US. In the UK, 250 to 500 mm is the normal range. If you do not know, measure it.
